Squeezelite normally output 2 chan. It would be up to the Windows audio subsystem to convert 2.0 into 5.1 Have you checked the Windows speaker settings ? If Windows recognises the 5.1 capability it will be shown as an option - whether it can be made to work with squeezelite is the next step.
