Ah, resolved the permissions issue from a tip from a user on the
Synology NAS forum. The resolution for me was to find the PUID/PGID
values for the NAS user to enter in the environment tab. Also changed
the ports per the following though I don't think the ports were any
issue:

I had to check online for how to find the PUID/PGID (this article helped
-
https://mariushosting.com/synology-how-to-find-uid-userid-and-gid-groupid/)
- I found those via SSH and noted them down. In Synology > Docker >
Container I stopped the lmscommunity/logitechmediaserver container and
clicked Edit, then changed the port settings in the port settings tab to
9902:9000 for TCP. I also clicked on the environment tab and entered the
uid and gid into the PUID and PGID fields. Once I saved those and ticked
the container to start again it now sees my music folders.

All set now! :)
