I noticed something, perhaps it's helpful to those working on the code? I'm on macOS Big Sur and left the setting in LMS Pref Pane on Automatically Start Server at Login (previously I always used When System Boots, but have been trying various things suggested here since that stopped working.) What I noticed is that when I went into System Preferences, and clicked Logitech Media Server, without doing anything else the Server showed Starting. I did not need to click the Start Server button! So I closed System Preferences, restarted, and reproduced the same thing again. Next, I left the System Preferences open, left the LMS Pane open so I could see the Stop Server button, and did a restart. Since my Mac is set to log in automatically and reopens all the windows from previous session, the LMS did in fact start automatically. Obviously this is not ideal, but it would seem that "touching" or opening the LMS pref pane is crucial to having the server start automatically. Hope this is helpful to someone working on a fix.
