For the automatic switching between SC and SN, I believe this is planned future upgrade, but I think the Server Switcher plugin may semi-automate the process or at least make it a bit more intuitive - have a search of the forums.
Shoutcast should work in both SN and SC. If it doesn't - take a look in the server.log file (linked from the Information page in Settings). When you try to play a station - what error message shows up? That should help narrow down the cause. It may be that you need something installed on the DS107 for those particular streams.
