For most people it makes perfect sense to completely disable store.log.
Not much interesting can be found in this log unless you are actively
diagnosing certain cache issues, in which case it is simple to enable
the log again for the purpose..

keeping the last week(s) of cache.log files makes sense in case there a
problem reported and you need to look into what happened.
