Squid should not stop working with thousands of simultaneous clients. As you aren't caching, the disk engine isn't relevant, which leaves something odd?! Can you still access the cache manager? If so, have a look at things like process FD allocation to see whats active. If you can't access the cache manager, turn on full debugging temporarily by running squid -X, then try to initiate a new request, then run squid -X again.
