To benchmark squid I do the following. Run several speed tests at http://www.numion.com/yourspeed from as many different computers on the network as possible.
Then, turn off squid (and modify your firewall to not use squid) and run the tests again. Do this a few times and it should give you an idea of the average speed with/without squid.
