Squid 2.5 is not supported by the dev-team anymore. Regarding the OS choice, http://wiki.squid-cache.org/BestOsForSquid is a good starting point. http://wiki.squid-cache.org/PerformanceAnalysis gives a few suggestions to start an analysis of what might be the root cause of the perceived slowness.
