It's a Windows 2000 server and we do 95% of the web hosting on it. I'd
like to keep DNS, Mail, PHP, and MySQL on Linux servers.

Why aren't you running SquirrelMail on your webserver??  Then just
change the 
SM config to point to your IMAP server.
