That's not supported, but you can do it manually if you so desire:  edit
the file /src/login.php and look for a line that looks something like:

echo '<BODY TEXT="#000000" BGCOLOR="#FFFFFF" LINK="#0000CC"
VLINK="#0000CC" ALINK="#0000CC"
onLoad="squirrelmail_loginpage_onload();">'.

Change it to something like:

echo '<BODY TEXT="#000000" BGCOLOR="#00CC00" LINK="#0000CC"
VLINK="#0000CC" ALINK="#0000CC"
onLoad="squirrelmail_loginpage_onload();">'.
