What version of SquirrelMail are you using? The versions I am running
(1.2.12[cvs], 1.4.1[cvs], and 1.5.0[cvs]) all have the filters plugin
as a core plugin, and all three versions support a header option.

As for making it red, you'll need to use message highlighting. That
option appears to be amiss of a "header" option... is that where you
meant?
