Xavier,

What you would do is to have your frewall be the gateway, quite simple. 
You would not want to setup mail on your gateway machine.

My setup is like what you are suggesting.  I have a FreeBSD firewall doing
IPFW/NAT pointing to my internal server running
Postfix/Courier/Squirrelmail.  If you want OpenBSD, same thing would
apply.  Should be pretty simple to accomplish.
I had given thought to putting the server behind a DMZ but not sure I have
the knowledge or the need to do so.
