Erm... this is an Evolution configuration issue. Nothing related to SquirrelMail. Are you using Evolution as a POP3 client, or IMAP client? If POP3, then you won't be able to see any folders BUT INBOX. If you using IMAP, then you'll need to tell Evolution to display them.
