Yes.  Run conf.pl (from the config directory) and choose option 4, then
option 10.  You can allow users to edit both email and full name, just
full name or neither.  Also, if you wish to verify an email's true sender,
look in the headers.  Squirrelmail adds a line like:

(Squirrelmail authenticated user jlee);

This would verify the true user who was logged in to Squirrelmail.

SMTP Auth is another option, although I'm not sure if postfix can lock
down the Sender of the message to being the authenticated user or not. 
Haven't really used Postfix all that much...
