SquirrelMail relies on your IMAP server to tell us the format of the email, be it html, plain, rtf, etc etc. Basically put, your IMAP server is telling us it's a plain text email, we're then rendering it as such. I vaguely remember there was an issue with an imap server that didn't like reporting the correct type if the MIME-Version header was missing.
