courier or cyrus work very well. I don't know what you've read, but Cyrus is excellent and not a PITA at all!
If you want 'easy' to admin email server, look at www.bynari.com

Have you taken a look into Courier-IMAP at all? If you're using uw-imap, chances are everything is in mbox format - there are many mbox -> maildir utilities out there that will help you move to the more robust maildir format.
It's something to look into, anyway..
php accelerator of some sort might be a good idea. I've been using the turck-mmcache and have been happy with its performance.
