I am using Sendmail, procmail, UW imap and pop, SquirrelMail, and mbox format.
In my cursory research I found that Courier imap standalone application only recognizes maildirs.
Is it possible to get my Sendmail/Procmail to use maildirs and then add on the Courier Imap and use UW pop, or are you advocating using the complete Courier package?
Yes you can use Sendmail/Procmail to deliver to maildirs. No, you cannot use the UW pop server because it does not understand maildirs BUT you can use the courier POP server that comes with the courier-imap application.
You are correct about the Courier application suite doing everything (sendmail, procmail, imap, pop, and even webmail) but you don't need to implement all of it if you don't want to. Keep the sendmail and procmail part if you are happy with it.
There are lots of reasons not to be happy with sendmail and procmail.
I recommend Qmail. Highly.

It also works with Procmail, and Maildirs, but is about 1 million times more secure than sendmail. (Not to mention speed and stability).
