Use Options - Personal Information
This creates a <username>.pref in data folder.

Eiw, well if you can't do something better (like find another host), you
might be able to use this:
http://squirrelmail.org/plugin_view.php?id=11
Or you can possibly override those variables using the per-user settings
of this:
http://squirrelmail.org/plugin_view.php?id=47
