enable message_details plugin and show us MIME-Version, Content-Type and Content-Transfer-Enconding email headers. P.S. some apple character sets (for example: MacIcelandic) are supported by extra decoding library. You can find it on SquirrelMail downloads page. But I think you are looking not at MacIcelandic, but at utf-8 and rfc2045 violation.
