The answer is in the file README in the plugin's directory. The "Options - > Personal Information \ Your current timezone:" is Same as server. SquirrelMail only reports what the IMAP server tells. Recheck all clocks (time and timezone) and configurations for the applications (and the servers they are at) needed to receive your e-mails. Reading the complete e-mail headers would likely help pinpointing where the time starts to deviate. Also, note that the time you're reading the e-mail has nothing to do with when it arrived to your IMAP account.
