George here are my answers to your questions

1) A standard PS/2 mouse and keyboard will work but there are some
limitations. 

With the mouse only the left button will work.

On the keyboard the Ctrl = Control, Windows (Start Menu Key) = Command
(Apple logo) and Alt = option. These end up being in the wrong order from a
Mac point of view. There is no power button.

Other than those points they should work fine. I have a USB Optical Wheel
mouse (standard PCI USB card + a driver from Apple) and have loaded the
driver from Microsoft so that the wheel works and the other button(s) can be
assigned functions. If I plug this mouse into the PS/2 port the Microsoft
driver does not recognise the mouse and only the left button works.

2) Most standard PCI ethernet cards will work but check on the manufacturers
web site for a driver before buying. Mac compatibility may not be listed on
the box but the driver may be on the web site.

3) Your Nec should be fine.
