I use an MP3 player with a hard drive. It's a Nomad Jukebox and it has a line-level input jack. I connect it to my amplifier with the old-style RCA cables and an adapter from Radio Shack.

The Nomad records in .wav format. I transfer the .wav files to my PC and then convert them to MP3s with AudioGrabber.

Hard-drive MP3 players are getting cheaper all the time. I saw one for $80 but I think it was an older-style Archos, and I'm not sure they can record.
