If you have no previous experience with the program, what is your current
level of knowledge in astronomy? Do you expect certain functionality in
such a program, how is it implemented, does it properly simulate what's
visible outside your door? Even naked-eye astronomy is such a wide field,
and Stellarium already covers so many topics from sky cultures and
multilingual aspects to telescope tracking, ocular fields of view and
satellite radio frequency information, it's hard to define what we would
like to have tested. I guess most of us (me included) even lack the
hardware to test the projection modes for small planetaria.

If you are deeply involved in astronomical computing, of course
astronomical accuracy and proper implementation of models is always an
issue to care about (i.e. finding inaccuracies and -- if possible -- going
into the code and repairing at the right place without breaking
assumptions elsewhere), but a week is likely not enough time to go very
deep. Else, you may limit yourself to test "New User" experience (i.e.
mostly the GUI, shortcuts, menu structure, extensions, ...),
cross-platform issues, or correctness and completeness of the user manual,
...

Not an answer, I know, but maybe we can find a useful set of test topics.
