Hello Michael,
My favoured stones for a high polished surface are
Irish freestone who is a common stone to purchase
and my favourite who is the Belgian black marble,
a perfect black stone hard as marble but not very
fit to work with chisels and more expensive, the
raw material looks a bit like schist.
