Do you have compression enabled for your zfs filesystem? I notice considerable user interface "stutter" with my quad-core 3GHz Opteron system when compression is enabled and data is being written, so you would certainly notice much worse with your much slower CPU. Since you have considerable RAM, it is likely that the write data is being cached, and then the system goes to sleep when the cached data is written and must be compressed. If this is the case, then disable compression. I notice similar problems when the sha256 checksum algorithm is selected. The severity of the periodic stutter can likely be reduced by limiting the zfs ARC size. My data may be atypical (probably due to years of manual compression), but I am not seeing much space savings from the compression which I have enabled on my backup drives.
