As Mike said, putting several raidz stripes into one zpool will give you more 
IOps, also raidz2 is preferred for production. Exchange 2007 is said to do less 
disk IO than previous versions (2003) and take advantage of ram, but I would 
still go with FC instead of iSCSI, for latency, security and performance. 
Setting up FC target with COMSTAR stack is a peace of cake and then you can do 
failover via iSCSI, you can find some great info about multipathing with 
COMSTAR in excellent Mike's blog.
