In case it helps anyone else, here is what I did to get snv_128a to boot.
This may well not be the best way, and if anyone knows a better way,
then please advise.

I booted into snv_118 using the old grub menu entry.
Then I mounted the new, but inactive,  snv_128a  boot environment,
and remove the FCoE target package:
        
        # beadm list
        BE            Active Mountpoint Space  Policy Created
        --            ------ ---------- -----  ------ -------
        opensolaris-2 N      /          61.08M static 2009-07-31 00:35
        opensolaris-3 R      -          15.13G static 2009-12-08 21:01
        # beadm mount opensolaris-3 /mnt
        # pkg -R /mnt uninstall -v SUNWfcoet
        # beadm unmount opensolaris-3

Then I tried booting with snv_128a again, but this time it had a
problem with the boot archive, and went into 'maintenance mode'.
Following the advise, here:

  http://blogs.sun.com/angad/entry/opensolaris_2008_05_has_no

..I did the following:

  # svcadm clear boot-archive; exit 0
  
.. and the system continued booting on into the normal GUI logon.
Once booted into snv_128a, I entered:

  # bootadm update-archive

Then I was able to reboot directly into snv_128a.
