So the CO2 > CO is endothermic. 

 

Big time.

 

But still needs carbon. 

 

Or another CO.

 

As I see it the only difference is the temperature changing as the gases
move around the pot. 

 

Gas concentration and temperature change a lot. There may be hot water
vapour ions in some regions more than others.

 

Wondering if the reading could be affected by temperature? 

 

Yup.

 

Perhaps amount of gas entering the instrument or something? 

 

Instrument errors. Processing systematic errors.

 

Interesting. Could hydrogen react with one of the oxygen in CO2 making water
leaving CO?  

 

Yup. At high temperatures lots of things happen.

 

If you can find it. Look for an article in the New Scientist called 'Up the
Starry Chimney'. It discusses the presence in space of very strange carbon
radicals that don't exist here for more than a few microseconds. They were
formed and then disbursed and found nothing available with which to react.
