javascripts frameworks (YUI, jQuery or whatnots) and server frameworks (stripes, plain JSP etc) are two very independent things. Usually most Javascript will play with most server frameworks (the God forsaken JSF is a notable exception).
I would suggest that you play around with YUI with plain JSP or HTML first. When you see how YUI works with JSP, how it would work with Stripes will be no different.
