Unless you want non ISO-8859-1 characters in your PDF output. (Actually, my experience might be outdated since it's been at least 18 months since I evaluated FOP). The lack of support for international charsets made me switch to iText (www.lowagie.com/iText). I found it in general to be much more feature complete and easier to use than FOP.
