There is an old example in the tile distribution from http://www.lifl.fr/~dumoulin/tiles/. This example was based on an old version of the tiles-doc.war, and some links aren't working. But, the example show how you can write a definition factory to serve a multi -channel application. You can also check http://www.lifl.fr/~dumoulin/howto/referenceADefinition.doc to know more about writing a definition factory.
Another approach for multi-channel is to use the i18n feature of Tiles, with the variant part of the locale indicating a channel (ex: tiles-config_FR_fr_variant.xml). The advantage is that you don't need to write a new definition factory.
