The defaults are for vehicle classes (vehicles that have dedicated infrastructure). To model cargo bikes in SUMO you should be fine by combining vClass="bicycle", adding a battery device ( https://sumo.dlr.de/docs/Models/Electric.html) and setting the appropriate length.
