Usually, openstreetmap has some geometry information to capture the major
curves of a road. If that data is lacking in your area, the next best thing
is to obtain aerial images and adapt to redraw/modify the shape so it fits
the image (

Note, that sumo models do not make use of road curvature to influence
traffic behavior except for speed reduction while turning at intersections.
