The bearing mainly depends on the route of the pedestrian but also on evasive maneuvers during the interaction with cars and other pedestrians. The bearing reflects a distribution only in the sense that there is some distribution in the origin and destination patterns of the person definitions. If you generate your pedestrians with randomTrips, the options --angle and --angle-factor can be used to emphasize a particular direction of walking. However, the actual distribution also depends on the structure of the network (i.e. if there is only a single road then there is little choice in bearings).
