Henri, 
  I would go for white marble. A couple of years ago I was traveling in
Greece and there were marble vendors along the road side dealing in
marble for building construction. There seemed to be alot of these in
Greece. I believe that is is not a hard stone and the color would make
it easy to see the shadows. Carving it could be done with grit blasting
or hand tools.  I kept thinking about slipping a slab of marble into by
luggage for a dial of my own.
