An excellent technical history, and a fascinating book to read, is _Geared to the Stars: The Evolution of Planetariums, Orreries and Astronomical Clocks_, by Henry C. King in collaboration with John R. Millburn, University of Toronto Press, Toronto, 1978, ISBN: 0-8020-2312-6. A massive book with over 300 illustrations, with technical details of the instruments and wonderful biographical sketches of the inventors. I believe it is out of print, but it can be found in many libraries, at least here in the US. No plans in it for making your own, but LOTS of information on how it has been done historically.
