I have worked on proof of concepts with 4 column x 2 row setups and it works fine, haven't tried a ten head policy configuration yet.  Response times was fine, but you tend to loose where the cursor is as the screen area is so big - we logged a few bugs on getting cursor size and panel bugs fixed in JDS during it (most of them are now fixed in JDS3/Solaris 10).

Note: if you are using Xinerama and want to run a large Rdesktop session to Windows, Windows can't drive a screen this big - the maximum we managed to achive is just over 3 (@1280) wide and 2 (@1024) high (although we didn't actually try more than 2 high).  I also haven't tried W2K3 with latest updates to see if this restriction has been fixed in the last year.
