Sunray server software (SRSS 4.x) will run fine on a virtualized environment. Looks like you refer to VDI 3.x which is only partly supported on a virtualized environment. Deployment guide recommends a 3 physical server setup.
I guess the primary VDi3 server which doesn't accept any sessions could be virtualized. The other 2 should be physical. we've tested a entirely virtualized VDI3 environment and we saw some degraded performance.
