Yes most USB cards and perhaps all Firewire cards will work in a Mac.
The thing to look for with USB cards is 'OpenHCI Specification" on
the box . There is another type of card which only works with
Windozes. It is not as common lucky for us but I was lucky enough to
buy one the firs time. The SGII cards are generally cheap and
available most places. Will S
PS you do not need to have an USB card to run iTunes. I have even
used it to burn cd's in OSX to my SCSI CDRW drive. I also like
SoundJam better but at some point with OS upgrades it will stop
working as it is no longer being upgraded. iTunes was /is written by
the SoundJam people
