You can jump straight to Jaguar. You'll need to read up on installing on these old world machines, and partitioning. Partitioning isn't absolutely necessary, but has advantages. Check out the list archives (like below) and the OSX Center page at OtherWorldComputing. You'll need XPostFacto (XPF) in order to install, it's at OWC as well. Here's the link:
