They're one and the same actually. Classic is the term which refers to the
OS 9 installation that is designated to activate when a non-OS X application
is used within the OS X environment.

For someone who still uses OS 9 quite regularly, it is often beneficial to
use a separate bare bones installation of OS 9 for the Classic environment.
This will allow it to startup faster and have less incompatibilities by
making it a lean System with few extensions loading. A person could use the
fully loaded and customized OS 9 install that they use daily as their
Classic environment, but it may be slower starting up and it may have 3rd
party extensions that are unnecessary or even problematic when it's used
within OS X.

So, "Classic" is whichever OS 9 installation you choose from within the OS X
Classic pref pane.
