An S900 can be made into a very capable G3/G4 machine. I used one for over
2 years running OSX only. It had (well, still does have) a G3/300. You
will need to put it on the 20GB drive (man, that one must have cost a
fortune!), 1GB just won't cut it for an OSX install. Unless it is on a
fast card, you'll probably want to install the drive internally, OSX works
better on a faster drive.

If you are still using the stock TwinTurbo video card, go get yourself a
Radeon Mac Edition or a Radeon 7000.

Two notes, 1) install Jaguar, it is a LOT faster than 10.1x. 2) If that
20GB drive is connected to a PCI SCSI card, verify the cards compatibility
with OSX before you install.
