I have posted before about ram issues. Most G3 upgrades are fussy about ram.
Try taking out the smaller/older ram modules and see if the system is stable
without them. Because you are getting a consistant crash I would expect that
is the best place to look first. The other crashing fix I found recently on
2 Macs was to replace the old adb mouse with a new usb one. Seems as they
get older the wires fray inside at the connection and start to short
circuit. This was on an 8600 that had random crashes and a beige G3 that had
frequent crashes for no reason other than the mouse being moved. After
replacing the mouse with a new one attached to a USB card both systems
became stable.
