My guess was correct you have the XLR8 Carrier Card SSE (no longer made but a great card cost extra when it was new)
The first 4 switches (1-4) control the cpu multiplier and the last 6 the bus speed. Exact opposite of the regular Carrier card (still sold new)
Switch setting for 300 Mhz cpu @ 50 MHz bus speed:
3,6,7,8,9
To answer the cpu temp question no one answered. In general 65 C is the top temperature considered safe. Under 50 C is much better for regular use. My G3's used to run 32 -38 C winter and 42 - 48 C summer hot days with only a fan in the room.
Want me to send you the chart? It's not every big and you should be able to get apox 350 MHz cpu if the Zif is good in my opinion but best to start at the rated speed. Will S
