train him on basic web page building, so it would be great if we could
use this. Btw, I know nothing about Macs and my friend, though he owns
one, knows very little about them.

I'm not really clear on what you have done here.

On a Mac, if you double click to open a local html file, it will open in the default browser, which appears to be Safari. That is expected behavior, html files are supposed to open in a browser for viewing. You could set them to all open in an editor but you really don't want to do that.

The problem with using the Mac Open With dialog is that it does not consider the components of SeaMonkey to be different applications. You cannot use the Open With dialog to open the file in Composer specifically. You can open it in the SeaMonkey browser then use File>>Edit Page to edit it in Composer.

If it desired to use SeaMonkey as the default browser, you could open it by double clicking, then use the above process to edit it.

If it is desired to leave Safari as the default browser, try opening SeaMonkey, then Composer, and make sure it has focus. In the menubar, which is at the top of the screen, click File>>Open File, and browse to the location of your file. Open it with the Open File dialog, and you will be able to edit it.

It is easier to open the file for editing if SeaMonkey is the default browser, but not necessary.

As to the problem of the file from your Windows machine, there would appear to be a problem with how it is saved. I suggest creating a simple html file on his Mac, then close SeaMonkey and reopen the file, to see how it behaves.
