Of course you can. Nothing has been deleted. SeaMonkey just exports your 1.x profile to the 2.x format. The original files aren't touched at all.
Only one profile from SeaMonkey 1.x is migrated to SeaMonkey 2.0.4 automatically. For the other ones, you need to start migration as described in the knowledge base: http://kb.mozillazine.org/Profile_migration_-_SeaMonkey
