JB,
Make a copy of your current desktop shortcut some where on your desktop.
Open the copy and change the "Target" line to the following:
"C:\Program Files\SeaMonkey2.1\seamonkey.exe" -addressbook
All you have to do is add the -addressbook to the end of the command
line, remember to include a blank space between the last " and the -

PS You might want to change the icon name to something like S M Adress Book.
