I have multiple email addresses setup under Seamonkey, work and personal
addresses, my personal email address is marked as the default address
for SMTP but when I change the from address to send by it still sends
the email from my personal address. Other than removing all of
Seamonkeys settings is there I way I can fix this? I can't find a way
to remove the "Default" tag from my gmail SMTP account.

Under "Mail& Newsgroup Account Settings," click the name of the account
and look in the lower right corner of the dialog, where you should see
"Outgoing Server (SMTP)." To the right of that is a pull-down list of
SMTP servers (assuming you have more than one). Select the one you want
that account to use. If it just says "Use Default Server," it'll use
whatever server you have set as the default, and whenever you change the
default, that account will change as well.

To set a particular server as the default, go to "Mail& Newsgroup
Account Settings," scroll to the bottom of the left-hand list (the list
of accounts) and click the last entry, "Outgoing Server (SMTP)." In the
list on the right side of the dialog that appears, click once to select
the server you want to set as default, and click the "Set as default"
button. You can also delete an unused SMTP server by the same technique.
If you have only one left, that'll become the default.

Thanks I sent that, but should Seamonkey override what ever SMTP server
I select from the drop down menu when composing a new message with what
ever I have have set as default?

My use case I have two SMTP servers one is personal mail the other is
work. My personal SMTP is set as default but when composing a email I
select my work email from the drop down for the from address and click
send. Rather than using the address I selected it used my personal
address still.

I did not experience your issue.
I have 4 accounts with 3 smtp servers.
From anywhere - a mail or a newsgroup, when i select a "from" from the "from adress" list - the corresponding smtp server is used;
