If my pop-settings do not leave email "on server", how would a second computer
see email already retrieved on another computer?

You won't. If you want this use IMAP instead.

Or configure pop to leave on server for [x] days, so that each computer will see
"new" mail via pop, download it, and then a few days later whichever is first
to load
it will delete it.

I did that in the past, when I had multiple computers accessing my POP account.

Assuming you use multiple computers to 'reply' you would have multiple Different
'sent' folders, wouldn't you?
