Figured out how to control the display of multipart messages. With the message open or displayed in the preview pane, do View | Message Body As. You can choose from Original HTML, Simple HTML, Plain Text, and All Body Parts.

In the case of a multipart message, if you choose "All Body Parts," you'll see the plain text version AND the HTML version, one before the other. The order of presentation is presumably the same as the order in the original message.

And of course if you reply with multiple parts showing, the quoted message will include multiple copies. If you reply in plain text, you get multiple plain-text copies; if you reply as HTML, you get a copy formatted to look like plain text and a copy with the full HTML formatting, both marked as quoted (with a bar on the left).

From what I can tell, this selection applies to all messages until you make another choice. So for example, if you choose "Plain Text," all messages will be displayed as plain text regardless of the sender's settings. And the setting applies across all accounts within the profile.

AFAIK there is no way to tell SM, "Whenever you receive a /multipart/ message, display it as...." All messages are treated alike as described above, until the user changes to a different global setting.
